Whether you are fitting out a unit for the first time, rolling a format out to a second location, or refreshing a space that no longer matches the food, we start with the same question: how does a customer move through this room, and what do they feel when they do.

We have worked on a Mexican restaurant and takeaway in Sheffield, a coffee shop on the edge of the city, a bakery in Doncaster, and German Doner Kebab across five sites from Norwich to Cobham. Different formats, the same problem underneath.

01Concept and brand.

What the place is called, how it looks and how it feels, worked out before anything is drawn. On New Shoots Coffee Shop in Sheffield we did the brand and the interior together, logo through to fit out.

02Space planning.

Covers, circulation, the counter and the way service moves through the room, planned around how you actually trade rather than around the shape of the unit. Get this wrong and no amount of finish fixes it.

DESIGN AND BUILD AS ONE

The drawings and the build are the same team.

A restaurant is where a design gets tested hardest: the joinery has to take a service, the seating has to take a Saturday, and the gap between what was drawn and what got built is where the money goes. Because we design, build and furnish, there is nobody to hand that gap to.

BUDGET AND THE LEASE

Two things worth settling before anything is drawn.

What it costs depends on the size of the unit and how much of it changes, so a figure on a page would only ever be a guess at your site. What is worth knowing early is where the money moves: glazing and joinery first, then seating, then the lighting over it. Those are the items that swing a restaurant budget, and they are the ones worth deciding on before a drawing exists rather than after.

If you are taking a unit rather than changing one you already trade from, get the lease in front of us early. You will normally need a licence to alter before work starts, and the lease will say what happens to the alterations when the term ends. Both change what is worth spending, and both are far cheaper to find out about now than halfway through.

HOW LONG ARE WE CLOSED

The question every operator asks first.

It depends on how much of the room is changing, and nobody can honestly give you a date before they have stood in your unit. What we will do is put a programme in writing after the survey, tell you which parts of it can run around trading and which cannot, and say so before you commit rather than halfway through. Closed weeks are the biggest cost on a restaurant project and they belong in the first conversation.

Frequently asked questions about restaurant and eatery design.

Do you work on coffee shops and takeaways as well as restaurants?

Yes. We have designed a coffee shop in Sheffield, a bakery in Doncaster, a Mexican restaurant and takeaway, and quick serve units for a national brand. The format changes what matters, but the process is the same.

Can you do the brand as well as the interior?

Yes, and it usually works better that way. On New Shoots Coffee Shop we created the identity and the interior together, so the logo, the signage and the room were designed as one thing rather than three.

Do you build it, or just design it?

Both, and you can have either. We design, build and furnish, so we can take a project from first sketch to opening, or produce a drawing pack for a contractor you already have.

Do you work outside Yorkshire?

Yes. We are based in Doncaster and most of our work is across South Yorkshire, but we have delivered projects in London and for brands rolling out across the country.
